Our selection of meats value flavour and improved standards of animal care. Rare breed beef features on all our menus. We are currently hanging a white park beef animal for a month prior to it coming onto the menu. The White park is a pure descendant of the ceremonial cattle introduced by the Romans, turned loose and feral on their departure, they are one of the true ancient English breeds. We are confident this will provide an almost unique quality of flavour tied with humane small herd production.

We source our own ‘rare breed’ meats directly from the farm. These are ancient breeds indigenous to our country; bred often over many hundreds of years to be adapted to our climate and to produce a quality of meat quite unlike that of modern breeds. Also, the farmer or smallholder producing these animals will be in it for purposes of quality, rather than bulk production as would be the case with, for example, modern continental breeds of cattle.

Our beef cattle we buy live ‘on the hoof’ directly from a small number of carefully selected farms, these are ‘farm assured standard’ farms. These farmers have a humane approach to farming, we use an abattoir local to them to reduce travel times to a minimum, and the farmer accompanies the beast to reduce stress and adrenaline levels. Our Rare breed animals have a longer life span to mature to a proper weight, as they mature more slowly than more commercial breeds. For wintering feed rare breed beef typically requires none of the cattle concentrates necessary for modern breeds, as a result the barley and similar winter feeds are grown on the same farm. We therefore have complete trace ability of not only beef animal, but feed also. Try our beef for yourself; roast on Sunday, a range of steaks in the evening and other innovative and traditional dishes. You will discover an unrivalled flavour the result of breed, and hanging times up to a month; confident that this is tied up with the highest standards of animal husbandry and trace ability.

Our town Butcher Arther Howell supplies local meats from his shop and award winning abattoir just along the street, his excellent sausages feature on our breakfast menu-once tried you will be sure to want to take some home. From his Butchery we have prime Venison from the local Holkham estate through the winter months, Turkeys which Norfolk is famed for-especially the Norfolk Black Turkey- and free range chickens: brought on to a good age-full of flavour and texture quite unlike usual mass produced poultry.
