LOCAL FISH, MEAT AND VEGETABLES PROVIDERS

Fish and Shellfish

Our menus feature local lobsters, crabs and oysters in season; local wet fish as available and great local smoked salmon.

Wet fish: our wet fish comes daily from local Kings Lynn and Lowestoft markets. The local fishing fleet supplying mostly shellfish. Occasional Skate and Bass we source from the Quay

Smoked Salmon: using sustainable farmed Salmon from the clear waters of the Atlantic our local smoker uses Peat to produces what is widely recognised as probably the best smoked Salmon you will have tried.

Oysters: our supplier in Brancaster has spent many years as a producer of fine, large Oysters. Brought on to an age and size far greater than is usual. Brancaster is recognised as having ‘A’ grade clear waters equal to the best the country has to offer. The Oysters are lifted straight from the marsh for the table, not available for a short time in September. The Pacific Rock Oysters are a staple on our menus, occasionally we offer the much prized native Oysters. We keep live Oysters throughout most of the year.

Mussels: From Mussel beds off Wells and landed at the Quay in Town, or from Brancaster, these are another local speciality. Not available in the summer months, the start and close to the season can vary around Easter to mid-September. We keep live Mussels throughout the season. Lobsters: landed on Wells Quay throughout the summer months, supplies dependant on the warmness of the water and good weather for the small boats to go to sea to empty their pots. In mid spring there is a halt in the season while they ‘shoot’ their shells. The freshness and succulence of our cold water Lobsters rivals that of Lobsters produced anywhere in the world as our customers often state.

Crabs: with a season throughout most of the year dependant on good weather for small boats to go to sea this is the shellfish our area is most famed for. Crabs feature strongly on our menus throughout the year. The flavour of our Crabs sheltering on the many sand banks along the North Norfolk coast changes subtly partly depending on the depth of water. Watch the fishing boats unload on the Quay at high tide especially during the summer.

Cockles: many are from the Wash. If we can find them we offer large cockles cooked to order from live in the same manner as Mussels. Properly prepared large, grit-free, succulent cockles are a real local treat.
